I made these this weekend and thought I would share the recipe! These little bites of heaven are SUPER easy to make.
Ingredients: 1 can of Libby's 100% pure pumpkin & a chocolate cake mix. Yes, that is it.
Mix together and the batter should like so (picture below). This has a thicker consistency than a regular cake mix - it is more 'fluffy'. You will have enough to make 24 regular size cupcakes (muffins) and 24 mini size cupcakes (muffins). Preheat oven at 350 and the minis take 10 minutes to cook and the regulars take 20 minutes. (Times vary depending on your oven, so watch them.)
This is the product of the chocolatey goodness! Did I mention 25 calories for the minis?!?! You just can NOT beat that! Just a word to the wise, these are LOADED with fiber. :) The regular size ones are about 150 calories per cupcake.
**just as a side note - I can not take credit for this amazing recipe. It was given to me several years ago from a WW friend. Hope you can try them out and test them on your family and friends! They will NEVER know or taste pumpkin in them!! If you are feeling really "bad", of course icing can be added to this treat. ;)
